Ingredients
(Serves 4–6)
• Ground beef or chicken – 500 g / 1 lb
• Onion – 1 medium, diced (100)
• Taco seasoning – 2 tbsp (15 g) • Taco Seasoning
• Garlic – 2 cloves, minced (2 tsp / 6 g)
• Bell pepper – 1 medium, diced (120 g)
• Sweetcorn (canned or frozen) – 150 g / 1 cup
• Cheddar or Mexican cheese blend – 150 g / 1 ½ cups (shredded)
• Milk – 240 ml / 1 US cup / 1 UK cup
• Eggs – 2 large
• All-purpose flour – 60 g / ½ US cup / ½ UK cup
• Baking powder – 1 tsp (5 g)
• Salt – ½ tsp (3 g)
• Black pepper – ¼ tsp (1 g)
Preheat oven to 180°C / 350°F. Grease a 9-inch x 13-inch (23 cm)
Bake: Place in oven and bake 30–35 minutes, until golden and set in the center.
Let cool 5 minutes before slicing. Serve with salsa, sour cream, or guacamole on the side.
